This is the BEST sauce for salmon, bar none. Great for a party or any fun event! You can double or even quadruple this for more servings. Takes time to chop up the ingredients, but it is so worth it! I love using a glass pyrex measuring bowl! And it’s really important to have a heavy duty nut chopper – I like the stainless steel model by Cuisinart!

Thai Salsa

Combine these ingredients in one bowl
3/4 cup Rice Vinegar
1/2 cup Soy Sauce
1/2 cup White corn syrup
1/2 Lemon or Lime juice (about 2 limes) 
1 cup Peanut Oil

Combine together and add:
1/3 cup grated ginger root
1/4 cup garlic, crushed
3/4 cup Cilantro, chopped
1 cup diced Scallions
1 minced Jalepeno
2 cups chopped Peanuts (roasted, salted)

Mix it up and ready to serve on salmon, chicken, rice, or even french bread.
